The Inspiration

CJ drew inspiration from popular internet cooking videos that feature fusion-style quesadillas and Asian flavors. On Griddle Nation, CJ adapts these viral concepts for a flat-top griddle, producing a version that is easy to recreate at home while still delivering restaurant-quality flavor. The combination of tender, spiced chicken, creamy Thai peanut sauce, and crisp cabbage slaw gives each bite complexity, while the griddle-cooked tortillas provide a perfectly crisp exterior. This recipe exemplifies CJ’s approach to approachable, high-impact cooking that’s perfect for entertaining or casual meals.

Ingredients

  • 4 Chicken Thighs, Boneless Skinless
  • Graza Sizzle Cooking Oil
  • Blackstone SPG Seasoning
  • 2 C Shred Cabbage
  • ¼ C Rice Wine Vinegar
  • 1 Tbsp Graza Drizzle Oil
  • 1Tbsp White Sugar
  • Salt and Pepper to Taste
  • Blackstone Island Stir Fry Seasoning
  • 4 Mission Burrito Size Flour Tortillas
  • 2/3 C Peanut Butter
  • 2Tbsp Red Curry Paste
  • 1/3C Coconut Milk
  • 2Tbsp Honey
  • 2Tbsp Soy
  • 1C Mozzarella Cheese. Shredded
  • 2 Tbsp Hoisin
  • Splash of Water
  • 2Tbsp Green Onions, Chopped
  • 2Tbsp Toasted Sesame Seeds

Methods

  • Preheat griddle to medium heat. Allow 10-15 minutes, or until the surface darkens and light smoke appears.
  • Add a bit of Graza Sizzle oil, then lay the chicken thighs on griddle and season with SPG and Island Stir Fry. Allow to cook 4-5 mins per side or until golden brown and cooked through.
  • In a medium bowl, combine cabbage, rice wine vinegar, Drizzle Oil, white sugar, pinch of salt and pepper, and sprinkle of Islan Stir Fry Seasoning.
  • In a separate bowl, combine peanut butter, curry paste, coconut milk, honey, and soy sauce. Set aside.
  • Once chicken is fully cooked, dice it up and set it aside.
  • To build quesadilla start with a tortilla on the griddle, then spread 2TB of the peanut mixture on it, then sprinkle ¼ C cheese, then add 1/4 of the cabbage slaw mixture, followed by ¼ of the chicken.
  • Fold tortilla over in half and cook until golden brown on both sides, or around 1-2 minutes. This makes 4 quesadillas. Cut into triangles.
  • Add 2TB hoisin and splash of water into the remaining peanut sauce and use it as a dipping sauce to serve the quesadillas with.
  • To plate, garnish the quesadillas with chopped green onions and toasted sesame seeds.
