This Tailgating Favorites recipe brings together bratwurst, loaded nachos, jalapeño poppers, and crispy quesadillas for the ultimate griddle-cooked feast. Featured on Griddle Nation, hosts CJ Fraizer and Nate Lippy combine bold flavors and high-heat cooking techniques to create a game day spread that’s perfect for sharing. Whether you’re hosting a backyard party or gearing up for the big game, this recipe delivers everything you want in a crowd-pleasing meal.

The Inspiration

Tailgating is more than just food—it’s an experience built around community, excitement, and bold, satisfying flavors. On Griddle Nation, CJ Fraizer and Nate Lippy tap into that energy by recreating viral internet recipes and transforming them into a cohesive, griddle-friendly feast. This dish is inspired by the kind of shareable, indulgent foods that dominate parking lot parties and game day spreads, but with a refined approach that makes everything easy to execute at home.

Instead of focusing on a single dish, this recipe brings together multiple fan-favorite elements into one unified cooking experience. Juicy bratwurst deliver that classic stadium flavor, while jalapeño poppers wrapped in crispy bacon add a smoky, spicy bite. The loaded nachos, topped with seasoned ground beef and melted cheese, bring richness and comfort, while the chicken quesadillas offer a crispy, cheesy option that rounds out the meal.

Ingredients

  • 4 Bratwurst Sausages
  • 4 Brat Buns
  • Blackstone SPG Seasoning
  • Blackstone Cajun Seasoning
  • 3 Jalapeno peppers, Cut in Half and Seeds Removed
  • 6 Strips Bacon, Thin Cut
  • ½ C Cream Cheese softened
  • ½ C Shredded Cheddar Cheese
  • 1 Pound Ground Beef
  • Blackstone Taco Seasoning
  • 2 C Shredded Blend Cheese
  • 1 Pound Pre-cooked and Pre-Seasoned Pulled Chicken
  • 1 Bag Mission Tortilla Chips
  • Spicy Brown Mustard for Serving

Methods

  • Heat griddle to medium heat. Allow 10-15 minutes, or until the surface darkens and light smoke appears
  • In a small bowl combine cream cheese and shredded cheddar cheese. Spoon into jalapeño halves and wrap each with a strip of bacon.
  • Add a small amount of Sizzle oil to griddle and lay down the jalapeño poppers. Cook for 2-3 minutes each side or until bacon starts to get crispy.
  • Separately lay down the bratwurst and ground beef. Season the ground beef with taco seasoning. Cook bratwurst until golden brown or around 3-4 minutes each side.
  • Place pulled chicken on griddle to warm.
  • When beef is fully cooked, or around 3-4 minutes add ½ C shredded cheese on top and let melt. Once melted, remove and serve on top of Mission Tortilla chips. Top with Pico.
  • Lay down flour tortillas on griddle. Cover with a handful of shredded cheese, then ½ cup of pulled chicken. Fold tortilla in half and cook until crispy on both sides.
  • When bratwursts are cooked through add a little Graza sizzle oil on griddle and season the oil with Cajun seasoning, then place buns on griddle to toast in the seasoned oil.
  • Serve bratwurst with Spicy Brown Mustard and enjoy the game!

Serving Suggestions

Pair this spread with refreshing beverages like cold soda, iced tea, or sparkling water to balance the richness of the food. Adding a simple side salad or fresh vegetable platter can also provide a lighter contrast to the bold, savory flavors. For hosting, keep the griddle going throughout the event so you can easily replenish dishes and keep everything warm, maintaining that fresh-off-the-grill quality that makes this meal so satisfying.
