
Ingredients:
3 large Yukon gold potatos
1 egg
200 grams of ground beef beef
1 onion
1 tablespoon minced garlic
1 tablespoon ground panca chili (you can use paste too)
1 small red bell pepper
1 tomato,
Finely chopped parsley
1 hard-boiled egg, chopped
1⁄4 cup hydrated black raisins
Botija olives (can substitute for kalamata)
Salt & pepper
cumin
dried oregano
Oil for frying
180 grams of flour
Bread crumbs
2 beaten eggs
5 servings
Method:
1. Boil the potatoes in salted water.
2. Peel them, press them while still hot and let them slightly cool.
3. Add a raw egg and season with salt and pepper to taste.
4. Knead with your hands until integrated.
5. Let rest while prepping the filling
6. In a large skillet, brown ground beef. Reserve.
7. In the same pan, cook onion, garlic, pepper and tomato. Season with cumin and oregano and the hot pepper.
8. Add the meat and parsley.
9. Remove from heat and let cool.
10. When the filling has cooled down a bit add the hard-boiled egg, raisins and olives.
11. Separate the potato dough into 4-5 balls.
12. Flatten each ball and place filling in the middle and close.
13. Shape like a mini American football ball. Continue with the rest
14. Dredge the potatoes in flour pass through the beaten egg and then cover with the bread crumbs.
15. Fry in hot oil.
16. Serve alone or with your favourite fresh salsa
