Method
Make Sole Meunière
- Pat fis completely dry. Season lightly with salt and white pepper. Dredge lightly in flour, shake off excess.
- Heat pan over medium heat. Add olive oil. Place fish in hot oil presentation side down.
- Cook fish 2–3 minutes, flip and cook for another 2-3 minutes It is done when light golden crust and flesh flakes apart easily.
- Remove fish from the pan. Add butter and cook until golden and nutty (2–3 minutes). Add lemon juice and parsley then spoon over fish.
Make Épinards à la crème
- Wash and dry spinach thoroughly. Heat oil in large pan over medium heat.
- Add spinach in batches. Cook until wilted (1-2 minutes per batch). Remove and let chill for 5 minutes.
- Squeeze excess moisture out of cooked spinach. In same pan, melt butter.
- Add shallot, cook 2–3 minutes until soft. Return spinach to pan and stir.
- Add cream and bring to a gentle simmer. Cook over medium heat for 2-3 minutes.
- Season with salt and white pepper. It is done when the cream has thickened and coats the spinach nicely.
