- 2 Snapper Filets
- Graza Frizzle High Heat Cooking Oil
- ½ Red Onion, Thinly Shaved
- ½ C Diced Mango and Pineapple
- 1 Jalapeño, Thinly Sliced
- 1 Red Fresno Pepper, Thinly Sliced
- 2Tbsp Champagne Vinegar
- 3Tbsp Mango Puree
- 1 Lime, Cut in Half
- 1/4C Sour Cream
- 1Tbsp Chipotle Sauce
- Mission Flour Street Tacos
- Cilantro, Chopped for Garnish
Methods
- Preheat griddle to medium heat. Wait 10-15 minutes or until griddle surface darkens and light smoke forms.
- Lay down a thin layer of Graza on the griddle and plane snapper filets down. Season with SPG. Cook on first side for 2-3 minutes and then gently flip. Cook another 2-3 minutes.
- Meanwhile, in a small bowl combine onions, mango and pineapple, jalapeño, red Fresnos, champagne vinegar, and half of the mango puree. Stir to combine and set aside.
- Place the lime flat side down on griddle to caramelize. This should take around 3 minutes.
