- 1 cup (40g) roughly chopped fresh Italian parsley or cilantro, or a combo
- 3 garlic cloves, smashed
- ½ cup (120ml) olive oil
- 1 ½ tablespoons fresh lime juice
- ½ teaspoon ground cumin
- Kosher salt
- One whole red snapper (about 3 pounds/1.4kg), scaled, deboned, and butterflied (head on or off)

For the Chile Lime Salt
- 3 dried arbol chiles
- 1 guajillo chile
- ½ cup (140 g) coarse sea salt
- Zest of 4 limes
- 2 tbsp sugar
For the Pico de Gallo
- 3 Roma or Campari tomatoes, seeded and finely diced (about 1 cup/180 g)
- ½ yellow onion, finely diced (about ¾ cup/100 g)
- 1 large jalapeño, seeded and finely diced (about ¼ cup/40 g)
- 3 tbsp roughly chopped fresh cilantro
- 3 tbsp fresh lime juice
- Kosher salt
For the Lime Crème Fraîche
- 1 cup (240 ml) heavy cream
- 2 tbsp buttermilk
- 1 ½ tsp fresh lime juice
- Pinch of kosher salt
Method
Make the Chile Lime Salt
- Remove the stems from the arbol and guajillo chiles, and shake out and discard the seeds. Chop or tear the chiles into about 1-inch (2.5 cm) pieces.
- Add the chiles to a small skillet, set over medium heat, and toast the chiles, tossing occasionally, until they are fragrant and beginning to brown on the edges, about 3 minutes.
- Cool for a few minutes and then add them to a food processor along with the salt, lime zest, and sugar. Pulse until the chiles have broken down into small flecks, a little larger than the grains of salt.
Make the Pico de Gallo
- Combine the tomatoes, onion, jalapeño, cilantro, and lime juice in a bowl. Season to taste with salt (1/2 to 1 tsp).
- Cover in an airtight container and store in the fridge for at least 1 hour before using. The pico will continue to pickle and release juices as it sits, so if you want a fresher flavor, make it closer to the time you’ll eat.
Make the Lime Crème Fraîche
- Place the heavy cream and buttermilk in a small container with an airtight lid. Cover and shake vigorously for 30 seconds.
- Leave the container at room temperature until the crème fraiche thickens to your desired consistency, 12 to 30 hours.
- Stir in the lime juice and salt.
Make the Salsa Verde Snapper
- Preheat the oven to 450F (230C). Line a rimmed baking sheet with foil.
- Add the herbs, garlic, olive oil, lime juice, and cumin to a blender, and blend to a puree. Season with salt, and set aside.
- Rinse and dry the fish, and place it skin-side down on the baking sheet. Season it liberally with the Chile lime salt and then spoon half (about 1/3 cup/75g) of the salsa verde over the top. Reserve the rest of the sauce for serving.
- Roast for 5 to 7 minutes, until the fish is just starting to turn opaque, and then turn the broiler to high and continue broiling for another 3 to 5 minutes, until the fish is lightly browned in places.
- While the fish roasts, stack the tortillas: Wet your fingers and flick a little bit of water on top of each tortilla before stacking another on top. Wrap them in foil and set them in the oven to warm for about 5 minutes. (If the broiler is on when you place them in the oven, put them on the rack that’s farthest away from the broiler.)
- Serve the fish directly on the pan, or use the foil to transfer it to a large platter. Sprinkle the top with more Chile Lime salt and some Pico de Gallo, and serve with extra pico, tortillas, Lime Crème Fraiche, and extra salsa verde on the side.
