Roasted Venison Tenderloin

Ingredients:

Venison Tenderloin
Fresh Cranberries
Farro
Honey
35% Cream
Fresh Salsify
Canola Oil
Kosher Salt
Fresh Rosemary
Venison Or Beef Jus
Marigold Microgreens

Ingredients:

1. Peel & cut the salsify
2. Set the Trim into a pot with cream and place on the stove
3. Add farro to boiling water and let cook
4. Season the venison and sear in a pan
5. Remove the venison, place on a sheet tray, and let rest
6. Add honey to a pot, bring to a boil and add the cranberries
8. Heat a pan, add oil, and roast the salsify, season with salt
9. Strain the farro
10. Heat a pan, add the venison back into pan, add in butter and baste the venison, searing all its sides
11. Plate & finish with microgreens
