Poisson en Papillotte with Aubergine Rotie Recipe

This Poisson en Papillote with Aubergine Rôtie recipe brings together tender halibut, delicate vegetables, aromatic white wine, lemon, and beautifully roasted eggplant for an elegant French-inspired meal. Featured on Dinner in Paris, host Romain Avril prepares the fish using the classic en papillote technique, sealing each fillet inside parchment paper so that it gently steams in its own flavorful juices.

The Inspiration

Poisson en Papillote is a classic French preparation that demonstrates how a simple cooking technique can produce delicate and impressive results. The phrase en papillote refers to food that is enclosed in parchment paper and baked, allowing steam to build inside the packet. As the fish cooks, the trapped steam circulates around the ingredients, helping preserve moisture while blending the flavors of vegetables, wine, olive oil, citrus, and seasoning.

In Dinner in Paris, Romain Avril combines these two preparations to create a meal that reflects both sides of French cooking: delicate technique and rustic simplicity. The parchment-cooked fish feels refined and fresh, while the roasted eggplant provides warmth, richness, and an earthy character.

The contrast between the two components makes this dish particularly satisfying. The halibut remains moist and delicate, the vegetables provide gentle sweetness and texture, and the roasted eggplant contributes smoky, savory depth. Together, they form a balanced main course that is elegant enough for entertaining yet approachable enough for a weeknight dinner.

Ingredients

For Poisson en Papillote
  • 4 thick halibut fillets (150–180 g / 5–6 oz each), skinless
  • 1 large zucchini, julienned
  • 1 large carrot, julienned
  • 1 large shallot, julienned
  • 4 tbsp white wine
  • 4 tbsp olive oil
  • 1 lemon, sliced
  • Salt and pepper, to taste
  • Lemon wedges, for serving
For Aubergine Rôtie
  • 2 medium eggplants
  • 4 garlic cloves, grated on a rasp
  • 1 tbsp thyme leaves, picked from the stem
  • 4 tbsp olive oil
  • Salt and pepper, to taste

Method

Make Poisson en Papillote
  • Preheat to 200°C / 400°F. Cut 4 large sheets parchment. Fold each in half.
  • In a mixing bowl, toss shallots, carrots, zucchinis, salt and pepper together.
  • Place seasoned vegetables on one side the parchment. Lay fish on top.
  • Season fish with salt and pepper. Add wine, oil and lemon juice over the fish.
  • Fold and crimp edges of the parchment tightly (must be airtight).
  • Place in the oven and bake 12–15 minutes. Remove from the oven and serve right away.
  • Open at table for steam release and to impress your guests..
Make Aubergine Rôtie
  • Cut eggplants in half lengthwise. With a sharp knife, score the flesh of the eggplant in crosshatches (1/4 inch deep).
  • Season the flesh of the eggplant with salt and let sit 15 minutes upside down on a wire rack over a baking sheet to draw out the excess moisture. Pat eggplants dry.
  • Preheat oven to 200°C / 400°F. In a small bowl, whisk together the oil, garlic, thyme and black pepper.
  • Brush marinade over the scored flesh of the eggplant.
  • Place eggplant flesh side down onto a baking sheet with parchment paper.
  • Roast 30-35 minutes, turning once after 20 minutes.
  • Remove from the oven and serve alongside Poisson en Papillote. Enjoy!

Serving Suggestions

This exquisite Poisson en Papillote with Aubergine Rôtie recipe is ideal for elegant dinners, special occasions, romantic meals, or any evening when you want a seafood dish that feels impressive without being excessively heavy. Serving the halibut inside its parchment packet creates a memorable presentation and allows each guest to experience the aroma released when the parcel is opened.

The dish can also be accompanied by simply prepared green vegetables or a modest portion of rice if a more substantial meal is desired. However, keeping the accompaniments uncomplicated allows the delicate flavor of the halibut and the aromatic roasted eggplant to remain the focus.

Fresh lemon wedges are particularly important when serving the finished dish. A small squeeze of lemon immediately before eating adds acidity and brightness, balancing the olive oil and complementing the subtle sweetness of the fish.

Whether served for guests or enjoyed as an elevated family dinner, Poisson en Papillote with Aubergine Rôtie offers an elegant combination of presentation, texture, and flavor.
