Onion Water Marinated Lamb Chops

Onions contain proteins that are great at tenderizing meat, and blending them to release their liquid is the best way to use this to your advantage. In this recipe, lamb chops are marinated in a spiced onion water to tenderize them and impart flavor, then grilled over an open flame, resulting in beautifully moist and flavorful meat.

 

ONION WATER MARINATED LAMB CHOPS

Ingredients:

  • 8 lamb chops (each 4 to 5 ounces and 1 ½ inch thick)
  • ½ tsp ground fennel (1.5ml)
  • 2 lbs white or yellow onions, chopped
  • 1 teaspoon ground turmeric (5ml)
  • 2 teaspoons celery salt (10ml)
  • 1 tablespoon garlic salt (15ml)
  • 3 scallions
  • 1 lemon, zested and juiced
  • ¼ cup olive oil

Method:

Add half of the onions and 2 scallions to a blender and blitz. Once they have started to come together, add remaining onions and scallion and blend. Strain this mixture into a bowl. Add fennel, turmeric, garlic salt, celery salt, olive oil, and lemon zest and juice and stir it all together.

Season the lamb chops with salt and pepper and place in a sealable plastic bag. Pour marinade over the lamb. Refrigerate for 2 ½ hours.

Preheat the grill to high heat. Remove lamb from marinade and place on grill. Barbecue the chops for approximately 5 minutes per side. Allow the lamb to rest for 10 minutes before serving.
