Lomo Salteado

Ingredients:

  • 2 cups frozen French fries
  • 2 tablespoons peanut oil
  • 250 grams filet mignon, sliced 1/8 to 1/4 inch thick
  • salt and pepper to taste
  • 1 medium onion, julienne
  • 1 red pepper large, julienne
  • 1 teaspoon Aji Amarillo
  • 1 teaspoon rice vinegar
  • 1 dash soy sauce
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons freshly chopped coriander
  • ¼ cup green onions, slivered

Method:

  1. Preheat the oven to very high (220 *C)
  2. Arrange frozen French fries in a single layer on a cookie sheet and cook until golden.
  3. Meanwhile, heat 2 tablespoons oil in wok over medium-high heat. Add beef and cook until it starts to brown. Remove beef from the pan and season.
  4. Add onions in the pan and cook until translucent. Stir in peppers and Aji Amarillo. Pour in vinegar and soy sauce.
  5. Add beef back and coat with sauce.
  6. Add fries, stir one second and serve. Sprinkled with Fresh coriander, parsley and green onion.
