Ingredients:
- 2 cups frozen French fries
- 2 tablespoons peanut oil
- 250 grams filet mignon, sliced 1/8 to 1/4 inch thick
- salt and pepper to taste
- 1 medium onion, julienne
- 1 red pepper large, julienne
- 1 teaspoon Aji Amarillo
- 1 teaspoon rice vinegar
- 1 dash soy sauce
- 2 tablespoons chopped fresh parsley
- 2 tablespoons freshly chopped coriander
- ¼ cup green onions, slivered
Method:
- Preheat the oven to very high (220 *C)
- Arrange frozen French fries in a single layer on a cookie sheet and cook until golden.
- Meanwhile, heat 2 tablespoons oil in wok over medium-high heat. Add beef and cook until it starts to brown. Remove beef from the pan and season.
- Add onions in the pan and cook until translucent. Stir in peppers and Aji Amarillo. Pour in vinegar and soy sauce.
- Add beef back and coat with sauce.
- Add fries, stir one second and serve. Sprinkled with Fresh coriander, parsley and green onion.
