  • 4 turkey legs
  • 2 tbsp of salt
  • 1 tbsp of ground black pepper
  • 1 tbsp of dried sage
  • 1 tbsp of dried thyme
  • 1 tbsp of Cajun spice
  • Zest of 1 lemon
  • 2 tablespoons of Bourbon
  • 3 cups of hickory wood chips

Method

  • Place 2 cups of the wood chips in water to soak for 30 minutes.
  • Combine saly, pepper, sage, thyme Cajun and lemon zest in a small bowl and mix together.
  • Place the legs on a tray and refrigerate for 4 hours.
  • For a gas grill, preheat the grill to high on one side.
  • On the other, leave the heat off.
  • Prepare the wood chip package by squeezing the excess water from the chips and place in the center of a large piece of foil.
  • Sprinkle Bourbon over the slightly wet wood chips.
  • Add the last cup of dry wood chips to the package.
  • Fold the edges together and seal the wood chips into a closed package.
  • Using a fork, poke holes in both sides of the foil to give the smoke room to escape.
  • Place the smoke package directly over the heat source.
  • Close the lid and wait for smoke. Reduce heat to 240ºF.
  • Place the turkey legs on the cool side of the grill and close the lid.
  • Smoke for approximately 2 ½ to 3 hours.
  • Remove from the smoker, tent with aluminum foil and let rest for 15 minutes.
