The Inspiration

Nate Lippy and CJ Fraizer drew inspiration for this recipe from viral griddle and seafood recipes that showcase the magic of cooking whole fish over high heat. The goal was to capture the flavor complexity and visual appeal of a restaurant-style stuffed fish while keeping it practical for home preparation. On Griddle Nation, they specialize in transforming simple ingredients into bold, approachable dishes that elevate comfort food and weeknight meals.

This recipe honors traditional seafood preparation techniques, including stuffing and careful searing, while incorporating modern, accessible ingredients and techniques suitable for the griddle. The dish highlights their signature style: bold flavor, crowd-pleasing presentation, and the excitement of high-heat cooking. It’s perfect for home cooks who want to impress guests without overcomplicating dinner.

Ingredients

  • 1 Whole Dorade Fish, Gutted and Scaled
  • Blackstone SPG Seasoning
  • Blackstone Island Stir Fry Seasoning
  • Graza Frizzle High Heat Cooking Oil
  • 4 Sprigs Thyme
  • 2 Cloves Garlic, Sliced
  • 1” Nub of Ginger, Sliced
  • 1 Jalapeño, Sliced
  • 1 Red Fresno, Sliced
  • 2 Lemons, 1 Sliced, 1 Cut in Half
  • 1 Bunch Broccolini
  • Edible Orchids for Garnish
  • 2 Green Onions Chopped for Garnish

Methods

  • Heat griddle to medium high heat. Allow 10-15 minutes, or until the surface darkens and light smoke appears.
  • In the meantime, stuff the fish with the Thyme, lemon slices, peppers, garlic, and ginger. Season fish inside and out with SPG.
  • Add a thin layer of Graza Frizzle High Oil, then lay down the whole fish. Cover with a dome. Allow fish to cook for 3-4 minutes on each side.
  • Apply more Frizzle to griddle and lay down the broccolini and lemon halves. Allow Lemons to caramelize 2-3 minutes.
  • Season broccolini with Island Stir Fry and SPG and more oil and toss to coat. Add a squeeze of water to help steam. Allow to cook for 3-4 minutes.
  • Plate on large platter with a bed of broccolini, whole fish, lemon halves (which can be squeezed over the fish), green onions, and orchids. Sprinkle Island Stir-Fry Seasoning on top.
