Copycat Primanti Bros. Sandwich

Ingredients:

For the Coleslaw:

  • 3 cups shredded green cabbage
  • 1 tbsp sugar
  • 1 1/2 tbsp white vinegar
  • 1/2 tsp salt
  • Black pepper, to taste
  • 1/4 tsp celery seed
  • 1/2 tbsp grainy mustard
  • 1 tbsp canola oil

 

For the Sandwich:

  • 2 slices thick Italian bread
  • Thinly sliced capocollo
  • 2 slices provolone cheese
  • Prepared French fries
  • 2 slices red heirloom tomato
  • Salt to taste

 

Method:

Add the sugar, white vinegar, salt, black pepper, celery seed, grainy mustard, and canola oil to a bowl and whisk to combine. Add the cabbage and toss to coat.

Warm the capocollo in a pan.

To build the sandwich, start with one slice of bread, then add warm capocollo, provolone cheese, French fries, and coleslaw. Season tomato with salt and add to sandwich. Top with additional slice of bread, slice the sandwich in half, and serve.
