Ingredients:
- 3 garlic cloves, sliced
- 2 vine ripened tomatoes, cut into thick slices
- 1 red bell pepper, cut into thin slices
- 1 large potato, cut into thin slices
- 2 bay leaves
- Sea salt and black pepper
- Fresh coriander
- Fresh parsley
- 1 filet of skate fish
- 1 filet of fresh cod
- 2 cups fish stock
Method:
- In a small casserole (with cover, cast iron better), layer all the ingredients: first a little olive oil, then a layer of tomatoes, then the potatoes, then garlic, peppers, onions, fish and finished with remaining tomatoes. Make sure to season every layer, then pour in the stock.
- Cook at low heat to build in flavour. It can be finished in the oven, but the stove top is recommended.
