Panamanian Eggnog (Ron Ponche)
Ron Ponche is a rich and creamy Panamanian eggnog made with a blend of sweetened condensed milk, evaporated milk, and egg yolks, gently spiced with cinnamon and nutmeg. Finished with dark rum and chilled to perfection, it offers a smooth, velvety texture and a warm, aromatic flavor that’s both indulgent and festive. Ingredients:
- 1 (14 oz or 414 ml) can sweetened condensed milk
- 1 (12 oz or 355 ml) can evaporated milk
- 2 cups (473 ml) whole milk
- 6 large egg yolks
- 2 cinnamon sticks, plus 8 for garnish
- 1 tsp (5 ml) ground nutmeg
- ½ cup (118 ml) dark rum
- 1 tsp (5 ml) vanilla extract
Method:
In a saucepan, whisk together the sweetened condensed milk, evaporated milk, whole milk, egg yolks, nutmeg, and vanilla extract. Add 2 cinnamon sticks and place over low heat. Whisk constantly, and do not let the mixture come up to a boil, until it has thickened, about 20 minutes.
Strain through a fine mesh strainer, stir in rum, and place in the fridge to cool for at least 4 hours. Serve in glasses garnished with a cinnamon stick.
