Pineapple Granita

Ingredients:

  • 1 ripe pineapple
  • 3 tablespoons honey
  • 1 sprig basil
  • 2 lemons, juiced

Method:

  1. Peel and cut pineapple into small pieces. Blend pineapple with honey and basil. Add lemon juice to balance the acidity.
  2. Place in a shallow pan and freeze. When hard, fluff with a fork to create a snow effect. Serve as a palate cleanser or the start of a cocktail!
