Chocolate Fudge Pops

Ingredients:

  • 1 /2 cup dark chocolate
  • 1/2 cup unsweetened cocoa powder (natural or Dutch-processed)
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon sea salt
  • 2 cups dairy or non-dairy milk
  • 1/2 teaspoon vanilla extract

 Method:

  1. In a medium pot, place cocoa powder, granulated sugar, cornstarch and kosher salt in a medium saucepan and whisk to combine.
  2. Slowly add the milk or non-dairy milk and whisk until smooth. Bring the mixture to a simmer over medium heat, stirring constantly until the mixture thickens and coats the back of the spoon. Add chocolate and vanilla, stir to completely melt and remove from the heat. Let cool, stirring occasionally, for 5 minutes.
  3. Divide between popsicle molds and freeze until completely solid, at least 6 hours.
  4. Unmold and serve.
