Ingredients
For the cauliflower
- 1 cup of plain full-fat yogurt
- 1 whole cauliflower (1 ½ lbs)
- 4 cloves of garlic, grated on a rasp
- 1 ½ tbsp of ginger, grated on a rasp
- 2 tbsp of vegetable oil
- 1 tbsp Kashmiri chili powder
- 1 tsp of cayenne pepper
- 1 tsp ground turmeric
- 1 tsp garam masala
- 1 tsp ground cumin
- ½ tsp ground coriander
- ½ teaspoon ground black pepper
- Salt, to taste
- Juice of 1 lemon
- Fresh cilantro (chopped), for garnish
For the sauce
- ½ cup of tahini
- ¼ cup water
- Juice of 2 lemons
- 1 tbsp honey
- Salt, taste
Methods
- In a mixing bowl, whisk together the yogurt, garlic, ginger, oil, Kashmiri, cayenne, turmeric, garam masala, cumin, coriander, juice of ½ lemon and black pepper.
- Separate the cauliflower into large florets so that they don’t fall before the grills.
- Place the cauliflower into a plastic bag and pour the yogurt marinade over top.
- Gently massage the cauliflower with the marinade.
- Refrigerate for a minimum of 2 hours.
- Preheat the grill to medium high leaving the middle burner off and the flanking burners on medium high.
- Place the marinated cauliflower florets on the middle burner and cook using indirect heat for 25 minutes with the lid closed.
- Meanwhile, make the sauce.
- In a mixing bowl, whisk together the tahini and ½ the water.
- It will tighten up.
- Add the remaining water, lemon juice, honey and salt.
- The sauce will loosen up again and have a nice texture.
- Lift the lid of the BBQ and turn the heat up to high.
- Move the florets over to sit directly over the heat.
- This will gently char the outside of the florets.
- Remove cauliflower from the grill.
- Garnish with cilantro and serve tahini sauce on the side.
