Crab and Scallop Steamed Dumplings

Ingredients:

  • 60 grams Dungeness crab
  • 20 grams scallop
  • 6 grams ginger
  • 2 cloves garlic
  • 2 tbsp light soy sauce
  • 2 grams sliced scallion
  • 2 grams chopped dill
  • 4 grams lemon zest
  • 10 egg wonton wrappers
  • 1 egg

Method:

  1. Place seafood, garlic, ginger and soy in a food processor.
  2. Blend until combined.
  3. Mix in chopped herbs and lemon zest.
  4. Scoop 2 oz of mix into wonton wrapper.
  5. Beat egg in a separate bowl and egg wash the edges of wrapper.
  6. Fold into desired dumpling shape. Repeat with remaining wrappers.
  7. Place in a steam basket and steam until cooked (about 5 minutes).
  8. Serve, straight out of the steamer basket or plated if desired.
