Ingredients:
1 large filet of monk fish (or the whole tail so we can do the cleaning also)
¼ cup ketchup
1 tablespoon smoked paprika
2 tablespoons honey (or maple syrup)
1 teaspoon powder garlic
1 teaspoon powder onion
Worcestershire sauce
Black pepper
Apple sider vinegar
Method:
1. In a large bowl, mix all the ingredients to make the BBQ sauce.
2. Drench the fish with sauce and let it marinate for a while (ideally overnight)
3. Heat a large grill over medium heat and brush it with oil.
4. Add fish and cook turning until nice and charred on both sides.
5. Bring fish to the oven and cook for 8-9 minutes until done (about 145*C).
6. Take from the oven and let rest a few minutes, during this time, keep brushing with the sauce. Slice before serving, the golden charred exterior will expose a tender white meaty interior. Serve alongside your preferred leafy salad.
