Ingredients:

2 Pc Altufo Mango 1/4 Cup white vinegar 2 tbs salt
1 tbs mustard seed
1 tbs coriander seed
2 bay leaves
1 clove garlic
1/2 tsp cumin seed
1 tsp sumac
1/2 tsp fenugreek
1 tsp turmeric
1/2 tsp chili flake
Method:

1. Dice mango, place in a bowl and sprinkle with salt. Let marinate overnight
2. Add all ingredients into a pot and bring to a simmer
3. Puree mixture until smooth
4. Let sit in the fridge for at least 2 days to develop flavour
