For the sliders
- 2 lbs. ground lamb
- Zest of 1 large lemon
- 1 tbsp ground cumin

- 2 tbsp oil-soaked sun-dried tomatoes, finely chopped
- ¾ goat cheese, crumbled

- 12 brioche slider buns
- Olive oil, for brushing

For the chutney
- 2 cups fuji apples, peeled, cored and cut into ¼ inch dice
- 2 tbsp lemon juice
- 2 tbsp vegetable oil
- 1 small yellow onion, finely diced
- 1 tbsp fresh ginger, minced
- ½ cup of rice vinegar
- ½ cup unsweetened apple juice
- 1 tbsp white sugar
- Salt and pepper, to taste
Method
- Make the fuji apple chutney.
- Cut the apples and place them in cold water and lemon juice to prevent them from browning.
- Heat oil in a pan over medium-high heat.
- Add onions and ginger and cook for 3-4 minutes, stirring occasionally.
- Add the apples and cook for 3-4 minutes.
- Add vinegar, apple juice and sugar and bring to a simmer.
- Cook for 8-10 minutes, or until liquid has reduced by 2/3.
- Season with salt and pepper and remove from the heat.
- Let cool completely in the refrigerator to tighten up.
