
Ingredients:
- 1 cup parboiled rice
- 1 cup fine table salt
- Powdered sugar
- Cinnamon
Method:
- In a large carbon steel wok, heat salt until it reaches above 200C (400F).
- Add a few spoons of the rice and whisk to cook and puff the rice. Sift the puffed rice to eliminate the cooking salt.
- Cool and save in an airtight container. Before serving, season with powdered sugar and cinnamon to taste.
