Puffed Rice Cereal

Ingredients:

  • 1 cup parboiled rice
  • 1 cup fine table salt
  • Powdered sugar
  • Cinnamon

 Method:

  1. In a large carbon steel wok, heat salt until it reaches above 200C (400F).
  2. Add a few spoons of the rice and whisk to cook and puff the rice. Sift the puffed rice to eliminate the cooking salt.
  3. Cool and save in an airtight container. Before serving, season with powdered sugar and cinnamon to taste.
