Griddled Chicken Caesar Salad Recipe

This Griddled Chicken Caesar Salad recipe gives the classic Caesar salad a fresh and flavorful flat-top twist with juicy seasoned chicken, lightly charred romaine, blistered heirloom tomatoes, and crispy homemade sourdough croutons. Featured on Griddle Nation, Nate Lippy and CJ Fraizer turn a familiar salad into a satisfying griddle meal finished with creamy Caesar dressing, fresh Parmesan, and cracked black pepper.

The Inspiration

Caesar salad is one of the most recognizable salads, known for its crisp romaine lettuce, creamy dressing, Parmesan cheese, and crunchy croutons. Adding chicken transforms the classic salad into a substantial lunch or dinner, but Griddle Nation takes the idea even further by bringing nearly every major component to the griddle.

Nate Lippy and CJ Fraizer draw inspiration from viral internet recipes and cooking trends, exploring how familiar dishes can be transformed through high-heat flat-top cooking. This Griddled Chicken Caesar Salad is a perfect example because the griddle doesn’t simply cook the chicken—it changes the texture and flavour of the lettuce, tomatoes, and croutons as well.

Everything comes together on a large platter with Caesar dressing, freshly cracked pepper, and generous shavings of Parmesan cheese. The result maintains everything people love about Chicken Caesar Salad while introducing the bold, charred flavours that define cooking on Griddle Nation.

Ingredients

  • Fresh Sourdough Bread Loaf
  • 2 Chicken Cutlets
  • Graza Frizzle High Heat Cooking Oil
  • Blackstone SPG Seasoning
  • Blackston Tuscan Herb Seasoning
  • 2 Heads Romaine, Cut in Half
  • 2 Bunches Heirloom Cherry Tomatoes on Vine
  • 2 Radishes, Sliced Thin
  • 1 Heirloom Tomato, Diced
  • 1 Wedge Parmesan, to Shave
  • Pepper to Taste
  • Caesar Dressing to Taste

Method

  • Heat griddle to medium high heat. Allow 10-15 minutes, or until the surface darkens and light smoke appears
  • Add a thin layer of Graza Frizzle cooking oil, then chicken cutlets. Season with SPG and Tuscan Herb. Cook for 2-3 minutes per side or until cooked through.
  • Meanwhile, cube up the sourdough bread and toss on griddle with cooking oil, SPG and Tuscan Herb seasonings. Cook until desired crispiness. Set aside.
  • Lay romaine halves on griddle flat side down for 1 minute only to lightly char. Remove and cut up.
  • Lay the vine tomatoes on griddle to blister. This takes only 1-2 minutes.
  • On a large family-style platter, lay down the cut romaine, the diced heirloom tomato, croutons, radish, and blistered tomatoes.
  • Dice up chicken and lay over the salad. Drizzle Caesar dressing overtop, season with black pepper.
  • Lastly before serving, shave fresh parmesan overtop.

Serving Suggestions

Serve this Griddled Chicken Caesar Salad for lunch, dinner, or a relaxed weekend meal when you want something fresh but still satisfying. The seasoned chicken and sourdough croutons make it substantial enough to enjoy as a complete main course, while the charred romaine, tomatoes, and radishes keep the meal bright and balanced. For a larger spread, serve it alongside additional grilled vegetables or fresh sourdough bread.

When entertaining, present the salad on a large family-style platter with extra Caesar dressing and freshly shaved Parmesan available on the side. Because several ingredients are served warm from the griddle, this salad is best enjoyed shortly after assembling so the romaine remains crisp and the croutons retain their crunch.
