- 4 (11-ounce) duck breasts

Method
For the Duck Breast
- Score the skin of each duck breast in a diamond pattern. (This will help the fat render faster.) season with salt and pepper, and arrange in a single layer on a baking sheet. Refrigerate, uncovered, overnight. Let come to room temperature for 1 hour before cooking.
- Preheat the oven to 250F arrange the seasoned breasts, fat-side down, in a cold heavy-bottomed, oven-safe skillet. Place over medium-low heat and cook, undisturbed, until the fat is evenly rendered and golden brown, about 15 to 20 minutes. Pour off the rendered fat, as needed.
- Transfer the skillet to the oven and cook for 10 minutes for medium-rare (135F), or until the desired temperature. Remove from the oven and place the duck breasts gat-side up on a cutting board. For the Sour Cherry Sauce
- In a saucepan, combine 1 quart of chicken stock, 6 thyme sprigs, 1 tsp black peppercorns, 1 peeled and quartered shallot, 1/3 cup freshly squeezed orange juice, and 2 tbsp red wine vinegar. Bring to a boil over medium-high heat. Reduce the heat to a simmer and continue to cook until the liquid has reduced to ¾ cup, 18 to 20 minutes.
- Strain, discard the solids, and return the liquid to the pan.
- Stir in 1 cup frozen pitted sour cherries and 1 tbsp cold unsalted butter, cut into small pieces, swirling the pan over low heat until combined.
- Remove from the heat and season with salt. (Store in an airtight container, up to 1 week.)
