- 2 tbsp olive oil
- 1 large white onion, diced
For the Glaze
- 1 Cup Nomato Sauce, recipe follows
- 1 ½ teaspoons grainy mustard
- 2 tbsp apple cider vinegar
- ¼ teaspoon kosher salt
For the Meat Loaves
- 1 pound dark ground turkey
- 1 tsp grainy mustard
- 2 garlic cloves, grated
- ½ tsp fresh thyme leaves
- ½ tsp kosher salt
For the Nomato Sauce
- 3 tbsp olive oil
- 1 large yellow onion, chopped
- 3 celery stalks, chopped
- ½ small butternut squash, peeled, seeded and chopped
- 1 small beat, peeled and chopped
- 4 garlic cloves
- ¼ tsp fennel seeds
- Bouquet garni: 2 thyme sprigs, 2 rosemary sprigs, and 2 bay leaves, tied together with kitchen twine
- 1 tbsp kosher salt
- ¼ tsp freshly ground pepper
- 4 cups of water
Method
Make the Nomato Sauce
- In a large heavy bottom saucepan heat olive oil over medium high heat.
- Add the onion, celery, carrot, squash, beet, and garlic and cook, stirring, for about 5 minutes.
- Add the fennel seeds, bouquet garni, salt and pepper and cook for 5 minutes or so more.
- Add the water, reduce the heat to medium-low, partially cove the pot, and cook for about 45 minutes, or until all the vegetable are soft.
- Discard the bouquet garni and let the sauce cool.
- Carefully transfer the mixture to a high-speed blender ad blend until smooth. (Work in batches, if necessary, and be careful when blending hot or still-warm liquids.)
- If the sauce is thinner and you like, return it to the pot and simmer over medium high heat for about 10 minutes, until thickened and reduced to your liking.
Make the Meat Loaves
- To caramelize the onio, in a medium sauté pan, heat the oil over medium heat. Add the onion and cook, stirring every few minutes, until dark brown, about 20 minutes. Set aside to cool.
- To make the nomato glaze, combine all ingredients in a saucepan. Add about one-quarter of the caramelized onions and cook over medium heat for about 10 minutes, them remove from the heat and set aside.
- To make the meat loaves, preheat the over to 375 F (190 C). Line a baking sheet with parchment paper.
- In a large bowl, combine the turkey, mustard, garlic, thyme, salt, and remaining caramelized onions. Form the mixture into 4 small football-shaped loaves on the baking sheet. Bake for about 30 minutes, then slather each meat loaf with some of the glaze and return to the oven for 15 to 20 minutes more, until the meat loaves are cooks through and the glaze has caramelized.
