The Inspiration
Duck has long been appreciated in culinary traditions around the world for its rich flavor and tender texture. While duck is often associated with elegant restaurant dishes, grilling offers a more casual and approachable way to enjoy this flavorful poultry. Duck wings are especially suited for barbecue because their darker meat remains juicy while absorbing smoky flavors from the grill.
This recipe from Maddie and Kiki’s BBQ Barn Season 2 embraces the creativity of barbecue cooking by pairing duck with an unexpected but delicious combination of raspberries and chipotle peppers. The raspberry chipotle sauce draws inspiration from the balance of sweet and spicy flavors found in many global cuisines, where fruit-based sauces are often paired with rich meats.
Maddie and Kiki Longo highlight how barbecue is about more than traditional grilled meats. With the right combination of flavors, the grill can be used to create dishes that are bold, creative, and memorable. The indirect grilling technique used in this recipe allows the duck wings to cook slowly and evenly while maintaining tenderness.
