Pastry and Sweet Pastry Dough

Pastry Dough

  • 2 1/2 cups all-purpose flour
  • 3/4cup cold unsalted butter, cut into cubes
  • 1/4 cup cold vegetable shortening
  • Pinch of salt
  • 6 tablespoons ice water

Blend the flour, butter, shortening, and salt in a bowl with your fingertips (or pulse in a food processor) until resembles a coarse meal.
Drizzle 4 tablespoons ice water evenly over and gently stir with a fork (or pulse in a food processor) until incorporated.
Squeeze a small handful of the dough: It should hold together in a ball without crumbling. If it doesn’t, add more water, 1 tablespoon at a time. (Don’t overwork the dough or it will become tough)
Empty the dough onto a floured work surface and gently work into a ball. Wrap in plastic wrap and chill for at least 2 hours

Sweet Pastry Dough

  • 3/4 cup cold unsalted butter, cubed
  • 2 1/3 cups all-purpose flour
  • 1/3 cup sugar
  • Dash of salt
  • 1 large egg
  • 1 large egg yolk

 


 
In a bowl whisk together flour, sugar, and salt to taste
Using your fingertips, blend the flour mixture and butter until it resembles a coarse meal.
In a small bowl with a fork lightly beat together whole egg and yolk and stir into flour mixture
Toss the mixture with your fingertips until egg mixture is absorbed
Gently knead the mixture in bowl until it forms dough. Turn the dough out onto a floured work surface and knead 5 times
Form the dough into a ball and wrap in plastic wrap
Chill for at least 2 hours
