
Sweet and juicy melons are the perfect food for a hot day. Here they’re made more fun with the use of a melon baller, and jazzed up with the flavors of lime, honey, and mint. This salad works great at breakfast, lunch, for a snack, or as a light dessert – really, whenever you want melons!
MELON BALL SALAD
Ingredients:
- Juice of 2 limes
- ¼ cup honey (60ml)
- ½ cup fresh mint leaves, chiffonade (125ml)
- 1 ripe honeydew melon
- 1 large ripe cantaloupe
- 1 small seedless watermelon or ½ of a large
- Pinch of salt
Special tools: melon baller
Method:
In a small bowl mix together the lime juice, honey, salt, and mint.
Cut the honeydew, watermelon and cantaloupe in half.
Remove and discard any seeds from the melon.
Using a melon baller, make balls from the melons and place in a bowl.
Drizzle melon balls with honey dressing and gently mix together.
Serve cold.
