Wild Rice and Wild Mushroom Soup

Ingredients

  • ¼ cup dried porcini mushroom – (60ml)
  • 2 tablespoons butter – (30ml)
  • ½ cup finely chopped onion – (125ml)
  • 1/3 cup wild rice – (75ml)
  • 6 1/3 cups chicken broth – (1575ml)
  • 3 large garlic cloves, sliced thinly
  • ¾ cup fresh shiitake mushroom, stem removed, caps sliced – (175ml)
  • ½ cup enoki mushrooms – (125ml)
  • ½ bunch fresh chives cut into 1-inch lengths

Directions

  1. Pour chicken broth into a pot and let simmer. Crumble in the dried porcini mushroom. Remove from heat and let steep for 5 minutes.
  2. Melt your butter in a large pot and add onions and rice and sauté to 2 minutes. Add your chicken broth and porcini mixture to onions and rice. Cover and let simmer for 20 to 25 minutes. Add your garlic and continue to simmer for another 15 minutes.
  3. Add shiitake mushrooms, cover and cook until rice is tender – 10 – 15 minutes.  Season with salt and pepper.
  4. Ladle into bowls and garnish with enoki mushroom caps and chives.
  5. Serve and enjoy!
