  • 2 tablespoons of olive oil (30ml)
  • Salt and pepper to taste
  • White wine Garlic sauce
  • ¼ cup of diced Shallots (62ml)
  • 2 ½ cups of White Wine (375ml)
  • 2 cloves of roasted garlic
  • 3 tablespoons of cold butter, cut into cubes (45ml)

Method

  • Lightly oil the grill. Drizzle the fillets with oil and season with salt and pepper. Place the fish delicately on the grill and cook for two minutes per side.
  • For Sauce, place wine and shallots in a saucepan and reduce by half. Add roasted garlic and using a hand blender mix thoroughly. Add butter gradually and whisk to incorporate.
  • Strain sauce and keep on low heat until ready to serve. Drizzle over haddock.

Serving Suggestions

For a classic seafood dinner, serve the grilled haddock alongside roasted baby potatoes, creamy mashed potatoes, or herb-seasoned rice. These comforting accompaniments provide a satisfying contrast to the tender fish while absorbing the flavourful white wine garlic sauce. Complete the meal with steamed asparagus, sautéed green beans, or roasted carrots for a balanced plate.

When entertaining guests, arrange the haddock portions neatly on individual plates and spoon the white wine garlic sauce over the fish just before serving. Pair the dish with colourful seasonal vegetables and roasted potatoes for an attractive restaurant-inspired presentation.

For a special occasion, serve the grilled haddock as the centrepiece of a seafood-focused dinner. Begin with a light green salad or vegetable appetizer, followed by the haddock and your favourite side dishes. The combination of fresh seafood, aromatic garlic, and smooth butter sauce creates a sophisticated meal without complicated preparation.
