Yield: Serves 6

Ingredients

  • 2 ripe organic red tomatoes
  • 2 ripe organic yellow tomatoes
  • 2 ripe organic orange tomatoes
  • ¼ cup of sliced red onion (62ml)
  • 15 fresh basil leaves
  • 6 oz goat’s cheese
  • Salt and pepper to taste
  • 2 tablespoons of balsamic vinegar (30ml)
  • 3 tablespoons + 1 teaspoon of olive oil (50ml)

Directions

  1. Wash and slice the tomatoes into ½ inch thick rounds and stagger onto a large plate.
  2. Slice the red onion into thin strips. Scatter the onions and basil on top of the tomatoes. Crumble goat’s cheese on top and cover.
  3. Refrigerate until ready to serve.
  4. Season the salad with salt and pepper. Mix oil and balsamic and drizzle the mixture overtop.
