Tomato & basil salad

Yield: Serves 6
Ingredients
- 2 ripe organic red tomatoes
- 2 ripe organic yellow tomatoes
- 2 ripe organic orange tomatoes
- ¼ cup of sliced red onion (62ml)
- 15 fresh basil leaves
- 6 oz goat’s cheese
- Salt and pepper to taste
- 2 tablespoons of balsamic vinegar (30ml)
- 3 tablespoons + 1 teaspoon of olive oil (50ml)
Directions
- Wash and slice the tomatoes into ½ inch thick rounds and stagger onto a large plate.
- Slice the red onion into thin strips. Scatter the onions and basil on top of the tomatoes. Crumble goat’s cheese on top and cover.
- Refrigerate until ready to serve.
- Season the salad with salt and pepper. Mix oil and balsamic and drizzle the mixture overtop.
