Ingredients:
1 Brined Turkey
1 stuffing of choice (Cornbread Stuffing or Egg Bread Stuffing)
¼ cup (60ml) butter
8-10 strips of bacon
Salt and pepper, to taste
Method:
Pre-heat oven to 375oF (190oC).
Season inside of turkey with salt and pepper.
Place stuffing of your choice inside both cavities of the turkey, until completely stuffed.
Place turkey in a large baking dish with a rack.
Butter the skin of the turkey, before laying bacon strips to cover the top of the bird.
Place turkey in oven and cook for 45 minutes to an hour.
Remove turkey from oven, and remove bacon from the top, discarding the bacon.
Baste the turkey with the liquids in the bottom of the pan.
Return turkey to oven, and repeat the basting process every 45 minutes.
There are two rules to cooking turkey: The internal temperature must reach a minimum of 165oF (75oC), and the turkey must cook for 20 minutes per pound.
If the skin of the golden brown before the turkey is fully cooked, cover with aluminum foil for the remaining cooking period.
Once turkey is completely cooked and skin is crispy and golden brown, remove from oven and let rest for 30-45 minutes.
Meanwhile, remove the stuffing from the inside of the turkey and transfer to a serving dish.
Present turkey to your guests and start slicing.
