Roasted Farm-Fresh Salmon in a Foil Pouch

Here is a quick, easy & healthy foil pouch recipe you will enjoy. It is so good you may want to also try it on the grill.

Serves: 4

Ingredients

  • 1 to 1 ½ lbs farm-fresh salmon or 4 salmon steaks (skin off)
  • 1 lemon
  • 1 onion
  • 1 green or red pepper
  • 1 yellow squash
  • 1 pint chopped fresh mushroom
  • Nonstick cooking spray

Directions

  1. Begin by chopping the onion, peppers, mushrooms, and yellow squash into thin slices.
  2. Combine all the vegetables together.
  3. Tear off 4 sheet of aluminum foil approximately 12 inches in length.
  4. Coat one side of the aluminum foil with nonstick cooking spray.
  5. Divide vegetable mix among the 6 sheets of aluminum foil.
  6. Place the salmon on top of the vegetables; season with salt, pepper and lemon juice.
  7. Fold the sides of the aluminum foil and press together to seal the fish inside the foil.
  8. Place packets on a baking sheet and place in the oven; bake for about 20 minutes, or until the fish is flakey.
  9. Remove the fish from the oven and allow to sit for at least 10 minutes, as the contents may be extremely hot.
  10. Variations:
  11. Try spicing it up with your own spice blends such as rosemary, anise seed, oregano or crushed red pepper etc.
  12. Add vegetables to your liking, such as seeded fresh tomatoes, fennel, zucchini or baby potatoes. Remember to cut to size for equal cooking times.
  13. Try putting the foil pouches on your grill for easy outdoor cooking
