Prosciutto Wrapped Turkey Breast with Tangerine Cranberry Sauce

Preparation time is 20 minutes, cooking 45 minutes, marinade 24 hours.

Ingredients
- 4 small tangerine
- 1 cup sugar – (250ml)
- 2 cups fresh orange juice – (500ml)
- 1 ½ cups fresh cranberries – (625ml)
- 2 turkey breast
- Prosciutto to wrap
Directions
- Preheat oven to 350 F For sauce, combine orange segments with sugar and put them on a baking sheet to sit in the fridge overnight.
- Add the tangerine to a sauce pan along with sugar and orange juice. Cook until thick and syrupy.
- Add the cranberries and cook until the cranberries are soft. Strain and return just the liquid to the heat to reduce further. Once reduce pour over orange-berry mix.
- Using plastic wrap with over lapping slices of Prosciutto; roll turkey breast with Prosciutto, like a jelly roll using the plastic wrap as a guide. Place wrapped turkey breast in a large heated skillet to sear until crispy.
- Place seared wrapped turkey breast in the oven to bake until cooked through. Slice turkey breast and plate with chive-mashed potatoes and top with sauce.
