Pork Tenderloins Au Poivre

Ingredients

  • 1 pork tenderloin, about 1 pound piece( 450 grams)
  • 2 tablespoons whole black peppercorns (30 millilitres)
  • 1 tablespoon coriander seeds (15 millilitres)
  • 1/2 teaspoon coarse salt
  • Peanut oil for frying

Directions

  1. Preheat the oven to 375 degrees Fahrenheit
  2. Put the peppercorns into a coffee grinder and pulse it for a few seconds. Then add the coriander seeds and pulse them until coarsely ground. Alternatively you can use a mortar and pestle for this.
  3. Trim any fat off the meat. Season the pork tenderloin with salt and roll it in the peppercorn mixture, making sure it is well covered.
  4. In a medium frying pan bring 2 tablespoons of peanut oil to a sizzle over a high heat and sear the pork tenderloin on all sides. This should take about 2 minutes per side. Once sealed, transfer the pork tenderloin to the oven to cook for 25 to 30 minutes or until medium well done.
  5. Let the meat rest for 5 minutes and slice and serve with basmati rice or pomme salardaise.
