Ingredients
- 1 pork tenderloin, about 1 pound piece( 450 grams)
- 2 tablespoons whole black peppercorns (30 millilitres)
- 1 tablespoon coriander seeds (15 millilitres)
- 1/2 teaspoon coarse salt
- Peanut oil for frying
Directions
- Preheat the oven to 375 degrees Fahrenheit
- Put the peppercorns into a coffee grinder and pulse it for a few seconds. Then add the coriander seeds and pulse them until coarsely ground. Alternatively you can use a mortar and pestle for this.
- Trim any fat off the meat. Season the pork tenderloin with salt and roll it in the peppercorn mixture, making sure it is well covered.
- In a medium frying pan bring 2 tablespoons of peanut oil to a sizzle over a high heat and sear the pork tenderloin on all sides. This should take about 2 minutes per side. Once sealed, transfer the pork tenderloin to the oven to cook for 25 to 30 minutes or until medium well done.
- Let the meat rest for 5 minutes and slice and serve with basmati rice or pomme salardaise.
