Pork Souvlaki | Spencer Watts

Ingredients:

1 ½ pounds (680g) pork tenderloin, cut into cubes

1/3 cup (80 ml) lemon juice

1/3 cup (80 ml) olive oil

2 garlic cloves, minced

2 teaspoons (10 ml) dried oregano

1 teaspoon (5 ml) onion powder

½ teaspoon (2.5 ml) salt

1 teaspoon (5 ml) pepper

 

For serving

4 Greek pitas, warmed

Chopped red onions

Chopped tomatoes

Tzatziki (see recipe)

 

Method:

Add cubed pork tenderloin, lemon juice, olive oil, garlic, dried oregano, onion powder, salt, and pepper to a large bowl and massage to coat pork thoroughly. Set aside to marinate for 10 minutes.

Heat olive oil in a skillet over medium-high. Transfer marinated pork to hot skillet and cook for 10-15 minutes, flipping periodically, until cooked through.

Serve with warm Greek pitas, red onions, chopped tomatoes, and Tzatziki (see recipe).
