Pan-Fried Farm Fresh Salmon Steak with Green Curry Aioli

The BC Salmon Farmers Association booth at food shows is always a popular one – partly because of this delicious and simple recipe.

Serves: 8

Ingredients

  • 2/3 cup (150 ml) mayonnaise
  • 1/4 cup (50 ml) extra virgin olive oil
  • 2 tsp (10 ml) green curry paste
  • 1 tbsp (15 ml) extra virgin olive oil
  • 8 – 4-5 ounce (120 – 150 g) salmon steaks

Directions

  1. Place mayonnaise in a small bowl. Slowly whisk the olive oil into the mayonnaise. Whisk in the green curry paste.
  2. Heat a frying pan with the oil over medium heat. Add salmon steaks and cook approximately 2 minutes each side.
  3. Remove from pan and serve top aioli. Serve immediately.
