Ingredients:

  • 1 ½ pounds (680 g) ground lamb
  • 1 egg
  • ½ cup (120 ml) chopped cilantro
  • 2 teaspoons (10 ml) onion powder
  • 2 teaspoons (10 ml) ground coriander
  • 2 teaspoons (10 ml) ground cumin
  • 1 teaspoon (5 ml) ground turmeric
  • ½ teaspoon (2.5 ml) garlic powder
  • ½ teaspoon (2.5 ml) ground cinnamon
  • Salt and pepper
  • Vegetable oil, for grilling

Special Equipment:

  • Long wooden skewers, soaked

Method:

Preheat the grill to medium-high.

In a large bowl combine the lamb, egg, cilantro, onion powder, coriander, cumin, turmeric, garlic powder, and cinnamon. Season with salt and pepper and mix well.

Divide the mixture into 6 portions, roughly 4-ounces (113 g) each. Shape the portions into long, thick sausages. Insert a skewer through each kofta and squeeze the meat onto the skewer. They should be roughly 1-inch (2.5 cm) thick.

Brush the koftas with oil.

Place the koftas on the grill and cook for 12-14 minutes, turning halfway.

Serve immediately.
