Mackerel Rundown
This recipe is from episode 5 of There’s No Taste Like Home.

Ingredients
- 2 Large salted mackerel
- 2 coconuts
- 1 large onion (thinly sliced)
- 2 spring onions
- Black pepper
- 1 scotch bonnet pepper
- ½ Yam
- 325g Cornmeal
- 200g plain flour
- Salt
- Tea spoon sunflower oil
- 600g Okra (lady’s fingers)
Directions
- Place the mackerels in boiling water for 20mins
- Drain and re-fill pan with fresh cold water and re-boil for another 10-15mins
- Drain and pour new cold water onto the mackerels
- De-bone mackerel and flake
- Release coconut from shell, wash and grate into a bowl
- Pour half a pint of water over the grated coconut and squeeze for 2/3 mins to release cream
- Strain coconut into a large pan.
- Repeat process for coconut
- Gently heat the coconut for 20-30mins to create custard
- Finely chop a large onion and place into custard along with spring onions, scot bonnet pepper and black pepper. Stir gently and leave for 3 mins.
- Place mackerel into custard and simmer for 7-10 minutes.
- For dumplings place cornmeal and white flour and salt into bowl.
- Pour in water, a little at a time to create a thick dough.
- Roll dough together into a sausage shape and divide into 8.
- Make dough into 8 dumplings.
- Place dumplings into hot salty water and add a tea spoon of sunflower oil.
- Peel yam and divide into 8.
- Place into pot with dumplings.
- Top and tail the okra and cut remainder into half. Place into the pan with the yam and cook for 10mins.
- Serve the mackerel and coconut custard with a dumpling, yam and okra.
