  • 1 side/4 full-length bones of beef short ribs weighing approximately 2.2 pounds (1 kg), frenched
  • Salt and pepper
  • 1-quart (1 L) beef stock

Stir-Fried Bok Choy
  • Vegetable oil, for stir-frying
  • 4 heads baby bok choy, halved and thinly sliced on a bias
  • 2 cloves garlic, peeled and thinly sliced
  • 1 1-inch (2.5 cm) knob ginger, peeled and chopped
  • 2 bird’s eye chilies, thinly sliced
  • 4 green onions, thinly sliced, whites and greens separated
  • Reserved Hoisin Glaze
  • Salt and pepper
  • 1 teaspoon (5 ml) toasted sesame oil

Method

For the Hoisin Glaze
  • In a bowl, combine the hoisin sauce, rice wine vinegar, chili flakes, and honey. Mix well.
