Ingredients:
2 tablespoons (30 ml) red wine vinegar
1 teaspoon (5 ml) Dijon mustard
1/4 cup (60 ml) olive oil
1 teaspoon (5 ml) dried oregano
½ teaspoon (2.5 ml) salt
1 teaspoon (5 ml) ground black pepper
1/2 cucumber, chopped
2 medium tomatoes, cut in wedges
½ green pepper, chopped
½ red pepper, chopped
½ red onion, sliced finely
4 ounces (114 g) feta, sliced
1 cup (240 ml) Kalamata olives, pitted
Method:
Add red wine vinegar, Dijon, olive oil, dried oregano, salt, and pepper to a large bowl and whisk together.
Add cucumber, tomatoes, green pepper, red pepper, red onion, and Kalamata olives to the bowl and toss with dressing.
Top with feta slices.
