Fruit Salsa Salmon Tacos

Recipe via BC Salmon Farmers Association.

A fresh healthy twist on an old family favorite.

Serves: 6 (2 tacos each)

Ingredients

  • 12 taco shells
  • Sweet Pepper Jelly
  • 1 lb farm-fresh salmon
  • Indian Spices of choice (i.e. curry, cumin etc.)
  • 1 cup red onion small diced
  • 1 tbsp olive oil
  • 1 tbsp kosher salt
  • Cilantro (optional)
  • 1 Recipe Fresh Fruit Salsa
  • 1 Recipe Green Curry Aioli

Directions

  1. Dice the red onion and puree.
  2. Dice the salmon into 1-inch pieces.
  3. Pat fish dry and season with kosher salt and spices of choice.
  4. Prepare tacos in oven according to directions.
  5. Heat oil in a large nonstick skillet over moderate-high heat. Add onions and sauté for 1 minute. Add the fish and fry for about 3 minutes until just cooked.
  6. Butter inside of taco with sweet pepper jelly.
  7. Fill taco shells halfway with fish mixture, then top with Fresh Fruit Salsa (see recipe below).
  8. Serve immediately.
