Fruit Salsa Salmon Tacos
Recipe via BC Salmon Farmers Association.
A fresh healthy twist on an old family favorite.
Serves: 6 (2 tacos each)
Ingredients
- 12 taco shells
- Sweet Pepper Jelly
- 1 lb farm-fresh salmon
- Indian Spices of choice (i.e. curry, cumin etc.)
- 1 cup red onion small diced
- 1 tbsp olive oil
- 1 tbsp kosher salt
- Cilantro (optional)
- 1 Recipe Fresh Fruit Salsa
- 1 Recipe Green Curry Aioli
Directions
- Dice the red onion and puree.
- Dice the salmon into 1-inch pieces.
- Pat fish dry and season with kosher salt and spices of choice.
- Prepare tacos in oven according to directions.
- Heat oil in a large nonstick skillet over moderate-high heat. Add onions and sauté for 1 minute. Add the fish and fry for about 3 minutes until just cooked.
- Butter inside of taco with sweet pepper jelly.
- Fill taco shells halfway with fish mixture, then top with Fresh Fruit Salsa (see recipe below).
- Serve immediately.
