Ingredients
- 6 large tomatoes, stems removed
- 2 lb crabmeat, picked over
- ½ cup of sour cream or mayonnaise
- 1 celery stalk, diced
- ¼ cup red pepper diced
- ¼ yellow pepper diced
- ¼ cup fresh coriander, chopped
- ¼ fresh chives, chopped
- ½ tsp paprika
- Juice of 1 lemon
- Salt and pepper to taste
Directions
- Combine all of the ingredients (except the tomatoes) in a large mixing bowl. Cover with plastic wrap and let 30 minutes
- Slice each tomato horizontally into thirds or quarters depending on size
- Place the bottom of each tomato on a separate serving plates and spoon some of the crab mix on top
- Place the next tomato section on top of the crab mix and then spoon on more crab
- Repeat again till you complete the napoleon stack
- Drizzle with good quality balsamic vinegar and serve immediately
