Ingredients:
- 2 tablespoons (30 ml) avocado oil
- 5 cloves garlic, chopped
- 1 pound (454 g) shrimp, peeled and deveined
- 1 lime, juice
- ½ cup (120 ml) whipping cream
- 1 tablespoon (15 ml) chili powder
- Salt and pepper
- 1 cup (240 ml) chopped cilantro
Method:
In a large skillet or wok, warm the avocado oil. Once shimmering, add the garlic and cook until fragrant, 2-3 minutes.
Add the shrimp to the pan and cook, tossing occasionally, until the shrimp begin to turn opaque, 2-3 minutes.
Add the lime juice, cream, and chili powder and allow the mixture to come to a simmer. Cook, stirring occasionally until the shrimp are just cooked through, 3-4 minutes more.
Season with salt and pepper. Stir in the chopped cilantro and serve immediately.
