Ingredients:
For the fish:
2 4-ounce (113 g) sable fish fillet
3 tablespoons (45 ml) miso paste
2 tablespoons (30 ml) honey
2 tablespoons (30 ml) mirin
2 teaspoons (10 ml) rice wine vinegar
2 tablespoons (30 ml) butter, browned
For the garnish:
1 tablespoon (15 ml) shiso leaves
1 tablespoon (15 ml) bonito flakes
1 tablespoon (15 ml) black and white sesame seeds
Specialty item required:
Cedar plank, water soaked 1 hour
Method:
Heat barbeque to 350 F (175 C).
Place cedar plank on grill to heat for 20 minutes.
In a bowl combine miso, honey, mirin, vinegar, butter.
Completely immerse the fish in the mixture.
Set aside marinated fish for one hour.
Spray the cedar plank with water.
In the barbeque place the fish on the cedar plank.
Let cook covered for 10-15 minutes or to preferred doneness.
Remove from the grill.
To finish:
Serve the sable fish on the cedar plank topped with shiso leaves, bonito flakes, black and white sesame seeds.
