Beef Pho

Ingredients:

8 whole cloves

3 star anise

1 cinnamon stick

2 teaspoons (10 ml) fennel seeds, slightly cracked

½ teaspoon (2.5 ml) coriander seeds

1 teaspoon (5 ml) ground cardamom

2 teaspoons (10 ml) olive oil

1 x 5-inch (12.5 cm) piece of ginger root, cut into ½-inch (1.25 cm) slices

1 large yellow onion, quartered

4 pounds (1.8 kg) short ribs

2 tablespoons (30 ml) salt

6 black peppercorns, crushed

2 teaspoons (10 ml) olive oil

10 cups (2.4 L) water

14 ounces (397 g) flat rice noodles

1 tablespoon (15 ml) sugar

¼ cup (60 ml) soy sauce

¼ cup (60 ml) Worcestershire sauce

 

To serve

½ pound (227 g) bean sprouts

4 green onions, thinly sliced

Bird’s eye chili peppers, thinly sliced

½ cup (120 ml) chopped cilantro

1/3 cup (80 ml) chopped fresh Thai basil

Lime wedges

Hoisin sauce

Sriracha

 

Method:

Toast the cloves, star anise, cinnamon stick, fennel seeds, coriander seeds, and cardamom in a skillet over medium heat for 2-4 minutes, or until fragrant. Remove from heat and reserve.

Set multi-cooker to Sauté. Add olive oil, ginger, and onion, and cook until the ginger and onion are lightly browned, about 5 minutes.

Add short ribs and sear on all sides, about 5 minutes. Turn Sauté setting off.

Add the toasted spices, salt, and peppercorns to the multi-cooker. Pour in the water. Close lid and lock. Close vent. Set to Pressure Cook on high for 35 minutes.

Meanwhile, to make the noodles, soak in warm water for 10 minutes, then remove and strain. Bring a large saucepan of water to a rolling boil on the stove. Blanch the noodles in the boiling water for 2 minutes, then remove and strain. Divide noodles evenly into 4 serving bowls.

When the broth is done cooking, allow the steam to naturally release for 25 minutes, then quick release the remaining steam by opening valve, making sure to vent steam away from you.

Pour the broth through a strainer into a large pot (the strainer with also catch the short ribs). Skim fat off the surface of the broth. Add sugar, soy sauce, and Worcestershire sauce to the broth and mix thoroughly. Carefully remove the meat from the short ribs, discard bones, then shred the meat using two forks. Add the shredded meat back to broth.

Pour the broth over noodles in the bowls.

Top with bean sprouts, green onions, bird’s eye chilis, cilantro, Thai basil, hoisin, and sriracha.
