Ingredients
- 1-tablespoon peanut oil (15 millilitres)
- 4 onions, finely chopped
- Salt and pepper
- 1/3-cup sugar (60 grams)
- 2/3-cup balsamic vinegar (150 millilitres)
- 1-teaspoon nutmeg (5 millilitres)
Directions
- Heat the peanut oil in a saucepan over a moderate heat.
- Add the onions and allow them to cook gently until they are soft, about 20 minutes.
- Add the sugar and reduce the heat.
- Cook until the onions appear dry and then add the balsamic vinegar and the grated fresh nutmeg.
- Reduce the heat to low and allow the onions and vinegar to cook until dry, about 1 hour. Stir occasionally.
Serve warm or store in the refrigerator for several weeks.
