Balsamic Onion Marmalade

Yield: 2 cups (500 grams)

Ingredients

  • 1-tablespoon peanut oil (15 millilitres)
  • 4 onions, finely chopped
  • Salt and pepper
  • 1/3-cup sugar (60 grams)
  • 2/3-cup balsamic vinegar (150 millilitres)
  • 1-teaspoon nutmeg (5 millilitres)

Directions

  1. Heat the peanut oil in a saucepan over a moderate heat.
  2. Add the onions and allow them to cook gently until they are soft, about 20 minutes.
  3. Add the sugar and reduce the heat.
  4. Cook until the onions appear dry and then add the balsamic vinegar and the grated fresh nutmeg.
  5. Reduce the heat to low and allow the onions and vinegar to cook until dry, about 1 hour. Stir occasionally.

Serve warm or store in the refrigerator for several weeks.
