Baked Farm-Fresh Salmon with Toasted Bread Crumbs & Capers

Salmon tastes great with many flavours – but it is also nice to let its own flavours speak for itself. Here’s a simple, tasty recipe that does just that.

Serves: 4

Ingredients

  • 4 tbsp olive oil
  • 4 tbsp lemon juice
  • 4 salmon fillets, 5-6 ounces each
  • 2 cups coarse bread crumbs, toasted (preferably fresh)
  • 3 tbsp capers
  • 2 tbsp melted butter
  • Salt & Pepper

Directions

  1. Mix lemon juice and oil
  2. Brush both sides of salmon fillet with mixture. Place on lightly-oiled baking tray, skin side down.
  3. Season with salt & pepper to taste; cover with bread crumbs.
  4. Combine capers and melted butter. Sprinkle on top of salmon fillet
  5. Bake in preheated 500 degree oven for 6-8 minutes.
