Baked Farm-Fresh Salmon with Toasted Bread Crumbs & Capers

Salmon tastes great with many flavours – but it is also nice to let its own flavours speak for itself. Here’s a simple, tasty recipe that does just that.

Serves: 4
Ingredients
- 4 tbsp olive oil
- 4 tbsp lemon juice
- 4 salmon fillets, 5-6 ounces each
- 2 cups coarse bread crumbs, toasted (preferably fresh)
- 3 tbsp capers
- 2 tbsp melted butter
- Salt & Pepper
Directions
- Mix lemon juice and oil
- Brush both sides of salmon fillet with mixture. Place on lightly-oiled baking tray, skin side down.
- Season with salt & pepper to taste; cover with bread crumbs.
- Combine capers and melted butter. Sprinkle on top of salmon fillet
- Bake in preheated 500 degree oven for 6-8 minutes.
