Kale and Sweet Potato Salad with Miso Recipe

This Kale and Sweet Potato Salad recipe combines caramelized sweet potatoes, tender baby kale, crunchy pepitas, fresh cilantro, and a bright miso-ginger dressing for a nourishing and flavorful meal. Featured on Cook the Books Season 3 with host Shahir Massoud, this colorful salad brings together savory miso, fresh lime, ginger, and toasted seeds for a satisfying vegetarian dish.

The Inspiration

Inspired by The Clean Plate by Gwyneth Paltrow, this recipe focuses on fresh, nutrient-rich ingredients while keeping the preparation simple and approachable. The combination of roasted sweet potato and kale creates a hearty foundation, while miso adds savory umami and lime and ginger provide a bright, refreshing contrast.

Roasting the sweet potato is especially important because the high heat caramelizes its natural sugars, creating tender pieces with beautifully browned edges. The warm potatoes are then tossed with fresh kale, allowing the greens to soften slightly without becoming overly wilted.

The miso-ginger dressing ties everything together with a balance of salty, savory, citrusy, and aromatic flavors. Toasted pepitas and sesame seeds add satisfying crunch, while fresh cilantro gives the salad a vibrant finish. Featured on Cook the Books Season 3, this recipe reflects Shahir Massoud’s focus on approachable cookbook recipes that bring interesting flavors to the home kitchen.

Ingredients

  • 1 tbsp chickpea miso paste
  • 2 tbsp olive oil
  • 1 sweet potato, cut into 1-inc cubes
  • ½ medium red onion, thinly sliced
  • ¼ tsp of kosher salt
  • ¼ tsp grated lime zest
  • 2 cups baby kale
  • ¼ cup picked fresh cilantro
  • ¼ cup hulled pepitas (pumpkin seeds), toasted
  • 1 tsp sesame seeds
For the Miso-Ginger Dressing
  • 2 tsp chickpea miso paste
  • 2 tsp grated fresh ginger
  • Zest and juice of 2 limes
  • ½ cup extra virgin olive oil
  • Flaky salt

Method

Make the Miso-Ginger Dressing
  • In a small bowl, whisk together the miso, ginger, lime zest, and lime juice. While whisking continuously, slowly add the olive oil, then whisk until emulsified. Taste and season with salt. Cover and store in the fridge for up to 1 week.
Make the Kale and Sweet Potato Salad with Miso
  • Preheat oven to 425 F (218 C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the miso and olive oil. Toss the cubed sweet potatoes in the miso mixture until evenly coated. Spread the potatoes out on the prepared baking sheet and roast for 20 to 25 minutes, until soft and caramelized.
  • Meanwhile, in a small bowl, toss the onions slices with the salt and line zest ad let sit for about 10 minutes.
  • While the potatoes are still warm (not hot), transfer them to a serving bowl and toss with the kale, cilantro, pepitas, onion, and dressing. Finish with the sesame seeds.

Serving Suggestions

This Kale and Sweet Potato Salad is versatile enough to serve as a light lunch, nourishing dinner, or colorful side dish. For a more substantial meal, serve it alongside grilled chicken, roasted salmon, tofu, chickpeas, or another plant-based protein. It also works beautifully as part of a larger vegetarian spread with roasted vegetables, grain dishes, hummus, and warm flatbread.

For brunch or casual entertaining, serve the salad at room temperature alongside fresh fruit and other vegetable-forward dishes. The bright lime and ginger dressing also makes it a refreshing pairing for iced green tea, sparkling water with citrus, or a crisp white wine.
